Tomato Baked Fish Recipe Ingredients:

1-2 fresh summer
tomatoes, thinly sliced

1 lb white fish
fillets (halibut, cod, flounder or turbot)

1/2 fresh basil
leaf, shredded
-
1/4-1/2 cup tomato
sauce
-
1/4 cup breadcrumbs
-
1/2 cup scallions,
minced
-
salt, black pepper
and fish seasoning, to taste
Tomato Basil Baked Fish Recipe Preparations:

Preheat the oven to
375 degrees F.
-
Add the tomato
sauce to the bottom of a baking dish.
-
Rinse the fish
fillets and pat dry.
-
Sprinkle salt,
pepper and fish seasoning to taste on both sides of the fish.
-
Lay the fillets in
the baking dish.
-
Chop the basil and
mince the scallions.
-
Add the breadcrumbs
to the pile of fresh herbs and chop roughly.
-
Top the fish
fillets with the herb and breadcrumb mixture.
-
Add the fresh
tomato slices on top.
-
Bake until the fish
is cooked through (around 20 minutes).
