Poached Salmon with Dill Recipe

Servings : 4
Poached Salmon with Dill Ingredients:

4 X ¼lbs skinned salmon fillet
-
½ cucumber - thinly sliced
-
½ medium avocado diced and peeled
-
1 cup long-grain rice
-
2 cup low-sodium chicken broth
-
½ cup dry white wine
-
1 tsp grated lemon zest
-
¼ tsp fresh ground pepper
-
2 tbs fresh chopped dill
Poached Salmon with Dill Preparations:
-
Bring broth and wine to a boil in a medium skillet.

Add cucumber and lemon; reduce heat and simmer until cucumber is
tender, about 2 minutes.

Add rice, avocado, dill and pepper.
-
Stir well and then add salmon pieces.
-
Cover and poach for about 5 minutes or until salmon is opaque in
center.
