Poached Salmon with Dill Recipe

Weight Watchers Points : 5
Servings : 4

Poached Salmon with Dill Ingredients:

  • 4 X ¼lbs skinned salmon fillet

  • ½ cucumber - thinly sliced

  • ½ medium avocado diced and peeled

  • 1 cup long-grain rice

  • 2 cup low-sodium chicken broth

  • ½ cup dry white wine

  • 1 tsp grated lemon zest

  • ¼ tsp fresh ground pepper

  • 2 tbs fresh chopped dill

Poached Salmon with Dill Preparations:

  1. Bring broth and wine to a boil in a medium skillet.

  2. Add cucumber and lemon; reduce heat and simmer until cucumber is tender, about 2 minutes.

  3. Add rice, avocado, dill and pepper.

  4. Stir well and then add salmon pieces.

  5. Cover and poach for about 5 minutes or until salmon is opaque in center.
