Lentil and Ham Soup Recipe

Weight Watchers Points: 5
Servings : 8

Lentil and Ham Soup Recipe Ingredients:

  • 3 qts vegetable broth

  • 12 oz extra lean ham, diced

  • 2 cloves garlic, minced

  • 12 oz lentils

  • 4 tsp olive oil

  • 1 c tomato juice

  • 8 c escarole, chopped

  • 1 c each diced carrots, celery and onion

  • Salt to taste

Lentil and Ham Soup Recipe Preparations:

  1. In a soup pot, saute garlic in oil.

  2. Add broth and lentils.

  3. Bring to a boil, then reduce to simmer, cover and cook for 20 minutes.

  4. Add celery, carrots, onion and tomato juice.

  5. Cover and simmer for about 20 minutes.
