Fresh Corn Salad Recipe Ingredients:

1 cup frozen corn,
thawed

4 cups barley,
cooked
-
½ cup green bell
pepper, chopped

½ cup red bell
pepper, chopped

1 cup green onion,
sliced
-
½ lime peel, grated
-
2 tablespoons lime
juice
-
3 tablespoons
vegetable oil
-
½ cup balsamic
vinegar
-
½ teaspoon salt
-
1 ½ teaspoon dill
weed
Fresh Corn Salad
Recipe Preparations:

Cook barley and let it cool.
-
In a large bowl combine corn, barley, onion and peppers.

For dressing combine lime juice, vinegar, oil, peel, salt and dill
in a small bowl.

Mix corn and dressing.

Cover and
refrigerate.
