Fresh Corn Salad Recipe

Fresh Corn Salad Recipe Ingredients:

  • 1 cup frozen corn, thawed

  • 4 cups barley, cooked

  • ½ cup green bell pepper, chopped

  • ½ cup red bell pepper, chopped

  • 1 cup green onion, sliced

  • ½ lime peel, grated

  • 2 tablespoons lime juice

  • 3 tablespoons vegetable oil

  • ½ cup balsamic vinegar

  • ½ teaspoon salt

  • 1 ½ teaspoon dill weed

Fresh Corn Salad Recipe Preparations:

  1. Cook barley and let it cool.

  2. In a large bowl combine corn, barley, onion and peppers.

  3. For dressing combine lime juice, vinegar, oil, peel, salt and dill in a small bowl.

  4. Mix corn and dressing.

  5. Cover and refrigerate.
